Tender chicken braised in a bright sauce of fresh lemon, garlic, and oregano, with golden potatoes that soak up every drop.
A Word for the Season
Greek lemon chicken is one of those dishes that feels like a warm embrace — the brightness of lemon, the earthiness of oregano, and the comfort of potatoes that have soaked up every flavorful drop. It is food that gathers people around a table and reminds them they are loved.
The Scriptural Foundation
"Better a small serving of vegetables with love than a fattened calf with hatred." — Proverbs 15:17
The Recipe
Ingredients
- 8 bone-in, skin-on chicken thighs
- 6 medium Yukon Gold potatoes, quartered
- ⅓ cup fresh lemon juice (about 3 lemons)
- ¼ cup olive oil
- 5 cloves garlic, minced
- 1 tbsp dried oregano (plus extra for serving)
- 1 tsp sea salt
- ½ tsp black pepper
- 1 cup chicken broth
- Lemon slices for garnish
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, whisk together lemon juice, olive oil, garlic, oregano, salt, and pepper.
- Arrange chicken thighs and potatoes in a large baking dish.
- Pour the lemon mixture over the chicken and potatoes, tossing to coat.
- Pour broth into the dish. Bake 45-50 minutes until chicken is golden and cooked through.
- Garnish with lemon slices and extra oregano. Serve with the pan juices.
Nutritional Note
Chicken thighs provide high-quality protein, iron, and B vitamins. Lemon adds vitamin C, which supports immune function and iron absorption. Potatoes offer potassium and fiber, especially with the skin on.
A Prayer for the Journey
Lord, thank You for meals that gather us together. May my table be a place of love, and may the food I prepare nourish both body and spirit. Amen.
