The authentic Greek country salad — ripe tomatoes, crisp cucumber, red onion, olives, and a generous slab of feta, dressed with nothing but olive oil and oregano.
A Word for the Season
There is a profound simplicity in the Greek village salad — no complicated dressing, no fuss, just sun-ripened vegetables, briny olives, and creamy feta dressed with good olive oil. Horiataki (the "peasant salad") reminds us that the best nourishment often comes from the most honest, unpretentious places.
The Scriptural Foundation
"He causes the grass to grow for the cattle, and vegetation for the labor of man, so that he may bring forth food from the earth." — Psalm 104:14
God's provision is both generous and simple. The same sun that ripens the tomato and the olive also ripens our faith when we tend it patiently.
The Recipe
Ingredients
- 4 large ripe tomatoes, cut into wedges
- 1 English cucumber, sliced in half-moons
- 1 small red onion, thinly sliced
- 1 cup Kalamata olives, pitted
- 1 large block (200g) authentic feta cheese
- ¼ cup extra-virgin olive oil
- 1 tbsp red wine vinegar (optional)
- 1 tsp dried oregano (plus extra for garnish)
- Sea salt to taste
Instructions
- In a wide, shallow bowl, arrange the tomatoes, cucumber, red onion, and olives.
- Place the whole slab of feta on top — do not crumble it.
- Drizzle generously with olive oil and vinegar if using.
- Sprinkle with oregano and a pinch of sea salt.
- Serve with crusty bread to soak up the juices.
Nutritional Note
Greek village salad is naturally low in carbohydrates and rich in heart-healthy fats from olive oil and olives. The lycopene in tomatoes is better absorbed with fat, making olive oil the perfect companion. Feta provides calcium and protein, while cucumber offers gentle hydration.
A Prayer for the Journey
Lord, thank You for the simplicity of honest food. Help me to find joy in what is real and unpretentious, and to nourish my body with the gifts of Your earth. Amen.
